Tell you what, tell us what you think you'll need and we'll tell you whether it's complete, has things you don't need, and/or other things you'll need.
There's a sticky in the Tech Articles from the homepage that discusses EFI to carb. Between that and the V6 to V8 swap sticky, you should know everything you need.

The 5 spd torque arm is the same as an '86 auto tranny (V6 or V8 - same thing).
You will need a V8 radiator. The '86 V6 radiator was small and had the connections on the wrong sides.
A carb V8 throttle cable would be easier to route, but you may be able to make the V6 cable go where you need it to go.
You won't need to change the ECM.
You will have to reroute, lengthen, and/or reterminate some wiring.
Otherwise, looks like you've done your homework.
