First, what do you propose to do that can't be done in the car? Second, before undoing anything, get a roll of masking tape and a Sharpie or other felt-tip marker. Label everything, on both sides of every connection. Get a camera and take plenty of well-lit photos. Get lots of large ziplock freezer bags, so you can organize and label every bolt. what resources you can pull together will determine whether ehe engine and trans will come out together or separately. In either case, your first moves will include removing the distributor cap, and draining the motor oil and trans fluid. And coolant. You'll certainly need an 11 mm wrench for the driveshaft, a 15 mm wrench or socket for the transmission crossmember, a straight screwdriver for the hose clamps, it's best to leave the power steering pump connected to the hoses rather than remove it with the engine, and likewise for the air conditioning if it still works. Best to remove the radiator before the engine. If you have cruise control, undo that from the engine and leave it in the car.

Also best to remove the crank pulley before trying to remove the engine. You can use vise-grips on the ring gear part of your flywheel or flexplate to keep the engine from turning while you're loosening the front crank bolt. Then, you may as well remove the damper. Makes it easier to get the engine past the front of the engine bay. Most of what I've mentioned is goof-proof.

I made the mistake of removing my first thirdgen eng/trans completely assembled right down to the a/c comp. and even the serp. belt.
All was fine until that darn pulley hit the bottom side of the rad. support!

Ususally there are 2 loops on the the corners of the motor where you can hook a chain, if not, mount a bolt somewhere on the front and rear of the motor (ie. cylinder head) and attach a chain there.

Taking them out together.. As it's your first time, try to have someone on hand to assist you. You might not be able to reach your cell phone to cal 911 for yourself :-) But in all seriousness, do get an assistant. Also, don't forget about the wires that are bolted to the rear of each cylinder head. These are usually a snag at the worst possible moment. I prefer to leave the starter in the car. The transmission cooler lines also need to be watched all the time until they're past the radiator support. You don't want to kink them.

Be sure your hoist is rated for 800 pounds. Then you can pull them together. Don't forget the torque arm, the shifter linkage, the throttle linkage, the power brake hose, the fuel lines, the negative battery cable, or the converter lockup wiring, and don't destroy the oil filter.

and Atilla has posted up some good things that people forget(like me)for one!LOL
Take your time and be absolutely sure that everything is disconnected before you go lifting that eng/trans out of the car.
There is no specific place to mount the chain that I know of,I had to relocate the chain a couple of times when I did the removal on my old car.

no problem man, were here to help each other out.
On another note, why exactly you want to remove everything?
If you're not looking at major engine repair and just want to clean up the eng. bay you can also pull the eng/trans with the complete harness still connected to them.
Makes alot of nice room for cleaning/painting and no overspray.

just be sure that the bolts and washers you use to attach the lifting chains to the engine are grade 8, that means the washers too. Regular washers car tear right through the hole in the chain and make a real mess.
You can bolt to the intake manifold bolts if there are no lifting loops already on the engine, or you can use the accessory holes in the front and rear of the heads. Just make sure your bolts are long enough.
Aside form that, just make sure everything is disconnected, and mark every wire and plug you remove to make things easier when you put it back in.
Unless your hoist has a very long reach, it may be a good idea to remove the bumper for some extra room. If the bumper get in contact with the hoist you can damage the paint or actually break the bumper itself.

Re: Taking out Engine and trans
I want to clean up the block well because it has some rust since the previos owner put water insted of antifreez
and paint it too. Im also planing on port/polishing the heads or buying some vortec heads not sure yet
, also instaling the hedders, new water pump, and maybe some more mods. and the trans i also want to clean/ do a kit to the trans, or i might sell it im bord of automatic i want the T56
and basicly becasue is much easier working on a workbench than having to bend in order to take out or put in parts
