10,000 isn't really going to be enough, certainly for an NA setup. You are likely looking at turbo territory (5.3 + turbo). Before you spend a single penny, read, read, read and read some more. There is plenty of info on this site to give you an idea of how you want to approach your project. The devil is in the details and details cost money.
500 to 650 is a huge range. I'd narrow that down. Its like saying your budget is 10k or 30k. When you are over 500hp every additional pony becomes that much more expensive.

What are your actual goals for the car? It doesn't sound like you know what you want. Horsepower makes sounds, not vehicle types.

Unfortunately 10k is not going to sniff 650 and likely not 500 with any level of safety. Since it has no engine or trans don't bother with anything older than an LS engine and trans. The truck engines can be had for pretty cheap and you are a cam swap away from a legit 350-400 hp at the crank and still have money in your budget to replace the other systems (brakes, cooling, rear end, better suspension) that a original V6 car would need upgraded to maintain safety. If you do the work yourself you might be able to come in at your budget and have a heck of fun car that sounds good and gets good mileage. As said before, read EVERYTHING you find on these cars and LS swaps and take your time. It will be a long process but worth it if you stick to it. Good luck!!
