Answer this question first: Are you willing to spend more money on this project than the car will be worth when you're done?
If the answer is "yes", then go find a donor car with a factory V8 similar in year and model to yours. This is the best way to get all the little connecting parts & pieces that you'll need that are different between a V6 and a V8. Part out the donor car when you're done and have the shell hauled off with the V6 parts (you'll probably have to pay to have this done).
Look through the posts on this forum for the past couple of months, and you'll find plenty of information about what it takes to do this job. The fact that the engine is pre-'81 is not a big factor in the effort.
