Do I want straight boots or angled boots?

I suggest that you get a good set of wire looms. Tie your wires down so that they don't wiggle around. I ran my wires over the top side because there was little clearence between the header and the back side of the head. Watch out for your starter, temp sensor, fan switch and knock sensor wires.

I agree: 90-degree boots and wire looms that route over the valve covers. I installed the Made For You centerbolt v.c. looms sold in Summit or Jegs and they work great. Wires still look brand new after 2 years. You can see some pix at:

of my Hooker headers and wire looms. If I had to do it again, I would've cut the AIR tubes off before having the headers coated since they get in the way trying to change the plugs or any other work in that area.
