Lets say this was done....

Lets say I ordered the hooker 3" catback for my car. Is there something I can use for now that will make the pipe fit into the stock 2.25 converter until I can get a 3" one?

you could just go to advanced auto, Napa or any other parts store and get a 2.25 to a 3" adapter pipe.

Did you buy the kit that was tailored for TBI cars? If so it already come with a 3" to 2.25" reducer and will bolt right up with simple hand tools. If you bought a TPI application it will not have the reducer.

Yes. It is the base LG4 and LO3 kit. The HO kit is for L69 cars. The only thing that differs between most cat-backs is the connection to the cat. Everything else is the same.

If it didn't come with the reducer, you can pick them up for about $5 at any parts store. Maybe even less than that.
