Find an exhaust shop that will do it for you. I know that most exhaust shops won't skip the cat install, but there are a few around me that will do some "custom" stuff.

just put a cat on it
on most street driven/setup cars you won't out flow the the high flow cat and in many cases you can pick up a small amount of power due to the increased heat allowing better scavanging. the longer the system the longer you need to keep the gases hot to keep flow.

i guess i could put a cat on it, thanks for the info,. i dont know too much about how they restrict or add to h.p. but at this point im pretty much just tryin to get the boy on the road and got mucho $$$$ invested, i figure the cat at maybe 300.00 opposed to just runnin somthing that wont be stupid, like straight pipes or the such, i want it run right though. its a rebuilt 350 and i just did it all for about the last eight months, i even tried to make my own torque arm adapter , that didnt work, but ones in the mail, anyway you know what im gettin at? heres some pics if your interested

Ditto . I run a single 3in Catco which I got for about that 120 mark. I run 12's at the track though it. IMHO sounds better too. No raspyness

Go Summit or Jeg's and run a search on Catco (a manufacturer of high-flow cats). Choose the one that best fits your application. For example, I chose the 9118 because it was a direct fit to my Hooker Y-pipe (3 inch) and my Hooker catback.

or just take wire and trace out how you want the exhaust to run as far as bends go and have them flange the end for your headers. have the shop make the pipe and you install that way there is no liability issue for them. only you but you can always just use the old "I bought it this way" most that will happen is the local pd gives you 10 days to install. not much of an issue though unless you have smog checks there in Ill. car chemistry also makes a silencer to go in your header collectors which are suppose to quiet it down to an acceptable level then use a muffler for a totally "legal" sound to it
