Looks like you are having fun planning the first round of mods to your car. My first camaro was an '85 2.8 v6 as well.
On to your questions - Personally I would get the cheaper Super Turbo catback over the Ultra Flow for your car. Unless you are planning some major engine mods, you'll get plenty of flow through the Super Turbo mufflers, and the Ultra Flows would likely cause a drone on your car.
Here are pics to show the difference between those mufflers (the F-body crossflows will look different, but this is just for comparison)
Super Turbo: http://www.dynomax.com/images/muffle...erturbo_lg.jpg
Ultra Flow: http://www.dynomax.com/images/muffle...awelded_lg.jpg
Moving on.....since you are planning on purchasing those pacesetter headers, there is no need to purchase the Dorman exhaust manifolds. Headers take the place of your stock exhuast manifolds.

I don't want to discourage you from modding your car, but you may want to really think about how much money you want to pour into that motor before you jump off the deep end. There's really only so much power that you'll ever get out of that motor without resorting to something extreme like turbocharging. A catback exhaust is a great way to make the car sound a little better, and if the car is currently in need of an exhaust anyway, then it's a great upgrade. But, don't expect it to make the car noticably faster, because most likely it won't. As for headers, they might help a little bit, but you're talking about minimal gains... maybe 5 horsepower. Is that worth the expense? Not to me... especially if you have to pay somebody else to do it.
My advice? Enjoy the car like it is. If performance is your goal, start saving for a car with a better motor (V8), or start saving for an engine swap. Just keep in mind that an engine swap is going to be a HUGE expense unless you can do it yourself.
