Y-Pipe and exhaust

I have a 91 RS Vert that I'm putting a 350 in. I bought some eBay stainless steel headers. They look nice. Nice thick flange, heavy gauge, 1&3/4" inlet and 2&1/2 outlet. My delema is I need a Y-pipe. My exhaust shop will make one but I need to get it there. Can I use a Y-pipe from Headman or Hooker? Are all the dumps have to be in the same place? I could drive it there but I am just worried about the O2 sensor with open headers. Could I drive it the 15 miles to the exhaust shop with out ruining my new motor? Also what size exhaust should I run? Is one muffler better then the next? What about CAT. My headers are 2&1/2" outlet is it worth it to step it up to 3" or should I just keep it 2&1/2" all the way?
