How many were made? (I had a Camaro white book but can't find it)

Was the rear carpeting available over the wheel well plastics?

2,497 (out of 21,177 '85 IrocZ's built)

This is a lucky decode because 99.9% of build counts when you combine options (Iroc-Z + engine + colour + AC, etc) are impossible to ever know due to Chevrolet not keeping stats on combination build counts.

HOWEVER . . . in '85, only the IrocZ got the L69 engine. And most individual RPO build counts are available. The RPO L69 for '85 shows 2,497 ($680.00 option). And since only the IrocZ got that engine, there's your answer.

PS; not sure about the carpet question.

Personally I think what would make the car most desirable is if it was a 5 speed.

The question on the rear compartment carpet is about RPO-B48.It was optional on the SC,Z28 and IROC(standard on the Berlinetta)and came on 18,418 total in '85.Does your IROC also have the locking load floor storage(RPO-D27 also standard Berlinetta)with 9,680 ordered.If the SPID decal is still on the underside of the console door(make sure the VIN on it matches your car's VIN)it will give all the options.
