Help with taking the computer out

My grandson and I are building an Enduro race car out of a 91 Camaro RS. It has a v6 that runs pretty good. Enduro racing doesn't need a whole lot of speed, just endurance. I would like to take as much of the computer out of the equation that I can. Any ideas? Thanks in advance
