Will an 8 point roll bar do the trick?

Will an 8 point roll bar do the trick?

I'm going to need a cage when I spray anyhow, but will I also need subframe conectors? Will a Jeg's 8 point stiffen it up enough?

No. You still need SFC.

Perimeter style SFCs are needed for properly strong mounting points for the cage.

You can do custom reenforcement of the areas where the cage mounts to the floor. It shouldn't be too big of a deal unless your exhaust is right on top of everything. You will want to find some way to tie the mount points together, though. SFCs usually do the trick, but custom always works.
