I think that the coils on them help the ride too, keep the shock more sturdy.

The biggest benifits are indeed adjustability and quick changabilty. With most you can adjust ride height, shock damping in both directions, and quickly change springs to change the spring rate. Good ones are lighter than seperate shocks and OEM type springs. They are also easier to fabricate into custom chassis setups than seperate shock mounts and spring perches.
