Rear Upgrades?

Rear Upgrades?
I’m looking into getting some 15x8 with a bs of 3.75 with a 295-50 tire for the rear. i know they are going to stick out a little but my main concern is the rear end height. With the new engine in, the rear is already sitting between 1-3 inches lower than the front. All new moog springs were put in before it went away for the winter. i was think the 1.5" steel plate spacer that sits on the spring but I’m not sure. I was also looking at doing a coilover kit for the rear like this http://www.summitracing.com/parts/CEE-2051/. But again I just don’t know that much about suspension.
