What years and vehicals did Chevy use vortex heads?

Chevy trucks first appeared with the VORTEC heads in 1995, and those were available in the original design through at least 2000.

Incidentally, "Vortex" is one of those aftermarket intake tract turbolators that is available at the back of the magazine or through late-night infomercials, and "Vortech" is a brand of centrifugal fan supercharger. Confusing, I know, but I thought I'd get the terminology straight.

 

Just thought I would add...

You would want the L31 (350ci/5.7L) Vortec heads, they are the ones that everyone talks about.
