Depends.

On a computer controlled car, I'd go with a 180*, on a non CC car 160*.

180* minimum rating if you have to drive it in the winter, I see you're in NJ.
160* summer if non cc.

But, don't forget, a lower stat won't help much, if you have a temp fan switch, stock setting is around 227* or so I believe, I'd wire up a much lower one.

Me, I'm a crazy ****. 180* tstat, fans on all the time. The car will ride at about 180-185 all the time. With my stock fan, I noticed it wouldn't kick in until 200 or so, but I'd get the most... feel out of the car at around 180-185 and it kinda lost something above that. I hope things will be the same with the new engine. LOL

i have a 350 over .40 and i run a 160* with my single stock electric fan from my 2.8L. I wired my fan to run all the time but the car runs at 160* all the time, it gives me excelent performance. i do have a 3-row radiator though, but i think you would get the same out of a good stock radiator. i just upgraded cuz i didnt have a V8 one when i did the swap.

if you don't have anything in it now it'll run hot or hotter than if it had a t-stat in it, you need the restriction to allow heat to transfer to the water ,or coolant.

every engine i've ever wrenched without a t stat need a restrictor to slow the water down long enough to remove heat from the engine

That would probably be fine in an LG4, but if you have the TPI engine and stock EPROM, I'd suggest the 180°F.

Probably, the way the computer works, you may not get out of closed loop mode, running so cool.

I'm running a non computer controlled carbed 350 (changed over from an LG4) and I'm running with a 180* stat cuz I want heat in the winter.
