put in a cam that requires a 3000 stall converter but use the stock converter. What would happen?

Your car won't leave, it will certainly will go slower than it could, maybe even slower than it did before you put the cam in. You will hate it.

Look at the posts recently about "used to spin the tires, now won't even chirp them". That's what happens.

yea i got a cam that wasn't good till 2500 and used it wit the stock converter and at first i was like "what the hell". after that i figured out that the point where the car just took off was right around 2500 rpm. so you'll need to get a higher stall converter
