What kind of pressure should I be holding at idle of about 550-600 RPM?

Depends on what motor you have.

The V8s that come in these cars usually have about 20 psi or so idling and 50-55 cruising, with 10W-30 oil. There are lots of variables though. Anything over 10 psi at idle is pretty much OK. Older SBCs came with pumps that did about 12 or 15 at idle and 30 to 35 cruising, and would go hundreds of thousands of miles that way.
