Welcome aboard.
You seem to be biting off a pretty big chunk here. Can we assume you will not be driving this on the street when it's where you want it to be?
Drag racing and low maintenance typically don't go together, especially when you're talking about a car that's being tubbed. But, that's especially true if you add a manual transmission to the mix.
I'd suggest you spend some time using the search function, and browsing around the Transmission & Drivetrain, Suspension, and Organized Racing forums. You'll see what people are doing with their cars, and how it's working for them. In general, the bigger the engine for a given performance level, the lower the amount of maintenance that needs to be done. I've talked to a guy from MN the last two years at the Division 5 NHRA finals who has an '82 Camaro, mini-tubbed, 400 CID engine, TH400 transmission, that runs mid-11's. Between 2003 and 2004, he didn't have to fix anything, just did basic oil changes and tune-ups. The car ran very consistent for him.
