How do you know when your water pump has had enough?

How do you know when your water pump has had enough?
I'm having some heating/cooling issues. I know that the fan clutch is bad, but I'm suspecting that the problems may not end there. Evne in normal 35mph driving in 15 degree weather, I've had my temp go up and through the 260 degree mark, and if I sit there and GUN th heck out of the motor, it will CRASH back down to the 130 degree, and drive in the 160-180 degree area for about 15+ minutes, then the temp will begin to increase.
Secondly - at a stop light, not all the time, but more often then not, my "Heater" will start blowing cold air.
I'll be replacing the Thermo stat (in cause it's sticking shut) and Fan Clutch today - any other suggestions? The water pump isn't leaking, but something isn't right if these things don't correct the tempature rising problem. Anything to suggest on the heater going cold issue?

heater core [if you have 1] on the cold blowing...on the pump they usually make a squeeling noise,my bet would be head gasket at those temps,good luck

Disregard - found the problem.... MASSIVE air buddle in the coolant track.
Popped the thermostat and as soon as I did, I heard a bubble water rush sound... hummm, left the old thermo stat in, tighten it up, put in some new coolant to fill the volume which was consumed by air, and now everything works 100%
Sigh... Just this morning before I did that, I checked the coolant level and it was fine... oh well, at least it's fixed.
