Sluggish camaro, timing perhaps? Help!

Sluggish camaro, timing perhaps? Help!
Ok i have a lo3 700r4 and 2.73 peg leg. Now my car has some miles on it odometer says 345,000 ( turns every 1/10 of a mile), more like 140,000. Ive been noticing lately that it lags quite a bit. My guess is timing. Now, i dont have many mods done to it, just shorty headers and a muffler, no cat, and a open element air cleaner. Awhile back i tore the intake off to replace some gaskets and didnt know what to set the timing at. I looked, and from the factory it should be set at 0 degrees. I dont know waht is up with it. It lags until about 2500 rpm and then it picks up. Also when i start it up in the morning, the rpms fluctuate real quick. it will go to 1000 then almost choke, then do it again, and for a third time too. Im just wondering what it is because my sister has the same driveline as me only with a flowmaster and hers seems way more responsive. Also before i make myslef look like a fool can someone explain the principle of timing to me?

Make sure that the est wire is disconnected, then set the timing at whatever it needs to be, be sure to plug it back in.

Is that the brown wire? Ive been pulling the brown wire to do my timing.

WEll you just solved your problem. It's a 140k mile lo3 with a small rearend.

i know the engine has some miles on it but it shouldnt be this slow. i just got back home from doing a run with my gtech ( i know its not that accurate but) and i ran an 11.42 in the 1/8th. It has been reading pretty close to what i have run before a 10.5 on the actual track. when i pin it it doesnt have the low end like it should. it has to be timing. that is the only thing i have done to it that would effect its performance negatively.
