rebuilding heads

If I was to pull the stock heads to clean them up would I be able to through a new set of undercut stem valves in them or do you have to get that valve seating compound to seat them? Also what are the factory head gaskets metal shim or composite? compressed thickness?

you can use manely pro flow valves with no problems. i'd have the seats cut. the gasket is composite and about .039 thickness.
