How much torque are they rated for? What can realisticly be ran through them?

The ones in the 4th Gens are rated at 450 ft/lbs. I believe.
Not sure about the max power, most of my friends with high powered LT1 and LS1 cars have automatics.

Be careful that you don't get your hands on a 93 T-56. They are rated at significantly less torque than their younger brothers.

Axle/Gears: 3.73
They are rated somewhere around 450 ft/lbs.

However, I know of a few cars putting out WELL over that (600-700 ft/lb range) on the stock T-56. Considering its a stock tranny, it is VERY strong.
