where do i hook up a manual oil pressure gauge to

I have an auto meter manual gauge and need to have it hooked up temporialy to see where the pressure is at onmy new crate motor. i dont trust the factory one.

There is a 1/8" NPT port on the rear ledge of the case, near the distributor. That connects directly to the oil galleries.

so i can just take the plug out and install the pressure fitting

Correct. For a temporary connection, a little PTFE tape will work fine, but if it were a permanent installation, some pipe sealant would be best.
