Engine: 406Ci Vortec SBC
Transmission: TH-350/3500stall
Axle/Gears: 7.5" Auburn 4.10 Posi-Traction
Open headers will not burn valves.
Exessive lean air/fuel ratios and retarded ignition timing will.
On a car with a borderline fuel system
with full exhuast (starves to motor for fuel at hi rpm) that is then run uncapped, the increase in breathing would now cause exessive lean mixtures and will damage the motor (pistons, valves) The real culpret
is the fuel system (pump,lines,filter) Once this is corrected, the carb will often need new jets 2 to 4 sizes bigger to feed all that newfound airflow.

My understanding of the subject (and I could be wrong) was that you are at risk of warping the exhaust valves, not burning them. The reasoning here is that the valves get really hot when the engine is running (duh). Anyway, when you shut the car off, if you don't have enough exhaust then they will be allowed to cool too fast by the outside air and can warp. This is a real possibility if you were to run the car without any exhaust at all. Maybe you saw the post another guy had about a car he was considering buying, the previous owner ran it without the manifolds. With headers you ought to be ok, but I wouldn't drive it any farther than the exhaust shop.
