Get a set of stock ones, turn them upside down, and look at what's in there.

What you see, is how you build a baffle.

Could be done a hundred different ways.

Put the hole in the valve cover where you want it. Then measure how much clearance you have between the valve cover and the rocker arm. Cut a piece of sheet metal or aluminum narrow enough to fit inside the valve cover and 3-6" long. Make a couple standoffs to hold the plate 1/4" or so away from the valve cover. Tack weld it in place centered under the hole in the cover.

Use your imagination. All you have to do is make a barrier between the oil and the hole in the cover.
