Header installation and loss of low end torque?

Header installation and loss of low end torque?
This is kind of a tech question. I just installed a set of Edelbrock TES headers into my 1989 5.7 Iroc. When I bought the car it already had the Hypertech chip(Yeah I know I didn't spend the money on it
) a 160 thermostat and the fan switch. I installed a flowmaster 3" cat back. When I put the exhaust in, the car would burn the tires of it from a dead stop. Now with the Edelbrocks a new 3" cat and the full exhaust,the car doesn't seem to get up and go like it used to. All of the AIR sytem is hooked up. I'm into motorcycles and I know that when putting a full exhaust on my GSXR 1000 and a complete dyno tune,it moved the torque curve higher into the rpm range. It also increased HP in the higher RPM range. Bascially I lost a little on the bottom end and gained on the top. Is this true on my car?

TES 1 5/8" headers on a 350 shouldn't lose anything. Does the car still spin the tires from a dead stop?
I know it sounds stupid, but is it possible your cat was put on backwards (assuming it wasn't a direct-fit flanged type).
Maybe a plug wire or two got burned on a header tube?

Cat is direct fit flange,new plugs,cap,rotor,msd wires with taylor heat boots. Just feels like it lost some on the bottom end. Car runs great no misses.
