200* fan switch - too cool?

Hey, got a question for you guys... I know the answers will really be opinion-based, but I'm gonna try it anyways.

I bought a fan switch (the temp sensor that goes in the head) from Painless that turns on at 200*F and turns off at 185*F.

I planned to just replace the factory switch with this one when I installed the new heads in the next couple weeks, but I'm wondering if maybe this one is just too cool? Will the fan ever turn off? Its just a single electric fan that came with my car (originally a 5.0 HO 4bbl car, now 350 w/ Holley 4bbl) with the stock 235*F switch. I don't like my engine to get that hot, which is why I looked for a cooler switch, but 200* was the warmest I could find besides the stock switch.

I'll be using a 180* thermostat, the engine it would go into is a 10:1 iron headed 350, XE274 cam, Holley carb, BIG Griffin rad, headers, etc etc.... I've noticed at the track last year my engine seemed to be at its best at around 190* or so, which is why I got the switch in the first place.

What do you guys say... should I use my 200* switch, or leave it out and use the stock one?
