No AC pressure switch, so fan always runs
My car doesn't have the AC pressure switch for the fan control - probably removed during the conversion to RHD - so the fan runs all the time. If I short the connector pins together then the fan will stop if engine temp isn't too high. (The manual shows the AC pressure switch opens above 1600kpa).
Given that my aircon is currently not operational, would it be better for me to short the connector all the time to reduce the fan operation to 'normal'? When I get the AC sorted out, I guess I should really get a pressure switch installed.

If you don't turn the A/C on at the dash the fans should revert to "normal" operation anyway (only turning on and off at certain engine temps). So simple I hesitate to suggest it since I'm sure there's a reason that wouldn't work for you. I mean if the A/C currently isn't working and all....
When in doubt- let the fans run. They're designed for a constant duty cycle and will often run for years of normal driving without any problem. Many of my 3rd gens I intentially ran the fans all the time, especially with modified motors that didn't like the rather high stock fan turn-on temps.

Not according to the wiring diagram in the manual... pretty sure it only showed the AC pressure switch there as an input for the ECM. The ECM uses the pressure switch and CTS to determine if the fan should turn on. So no, my AC is not turned on at the dash.
As for letting the fans run doesn't that defeat the purpose of running electric fans which for efficiency should only run when needed? Plus it means slightly longer warmup time and cooler running. If I'm right and the switch was removed in the conversion and it's the original stock fan, I have no doubt it can run continuously for years of driving without problem, but on the other hand that would mean it's been that way since 1989 and I'd rather not have it die anytime soon
