Not much. I put V6 springs in my BBC car for a few years before finally buying trick springs for the front and a coil over shock system in the rear. The V6 spring may allow the car to settle a little lower.

Don't forget Stephen's was a race-only car.
I found that although the car didn't sit all that low, it would easily bottom the suspension in dips and over bumps. If you remove AC and PS in the process (or otherwise lighten the front end), you won't have as many problems.
V6 sway bars aren't as big as V8, either, so body sway will be worse.
