EGT?
Im wondering whats a typical EGT if im checking using an IR temp gun.
I was holding the R's at about 2500 for maybe 2 mins or so and the headers were around 550+

Heat gun won't give you the same results as an actual probe inside the tube.
Checking at an idle doesn't tell you much. 300-400 degrees would be normal but maybe a little cool. If your headers are glowing red at an idle because of a lean mixture, you'd be 1200+.
I use an EGT in the #1 tube. I try to have around 1200-1300 crossing the finish line at WOT. At an idle, the EGT says around 500. If I shoot the coated headers with a temp gun, I get around 200-250.
The best thing a heat gun can tell you is if all the cylinders are making the same amount of heat. It's an easy way to find a weak cylinder. Reving the engine up like you're doing, should produce the same temperature on each tube.

Im not racing or anything just trying to track down some bugs.
The car will run for maybe 30 mins then die as if it runs outta gas even tho the FP gauge reads 60psi.
I was asking about the EGT's because my underhood temps are almost unbearable to work with the car running and EVERYTHING gets singing(sp?) hot.
I have no clue whats wrong with my car but im trying to find out whats right...
so 550+ or so is ok for around IDLE to 2000rpms....

Sounds like you have a vacuum leak somewhere. At an idle 300 would probably be a limit when checking with a heat gun because you're not really checking the real temperature of the exhaust gases. My EGT gauge reads around 500 and if I bring the idle up, I can get 700-800.
I've checked a lot of diesel exhaust manifolds to detect bad injectors with a heat gun. At an idle, they usually peak around 250 degrees.
