350 Full Gasket set question?

I'm doing 2 engine rebuilds at once right now. One for my street strip car and the other for my brothers Nova.

My setup is a 80' 350 4 bolt main and the other is an 89' 350 2 bolt roller engine. Both will be carbed. What would be the difference in these 2 gasket sets kits besides the rear main seal? The early model gasket set is much cheaper than the late model. Just wondering if I can buy early model gasket sets for both and get the 1 piece rear seal separate?

The oil pan gasket will be different too.

Ok, that shouldn't be a problem since my brother wants a 1 piece pan gasket anyways.

And the valve cover gaskets-providing you're going back with center bolt heads on the late engine. The earlier set should have perimeter bolt gaskets, probably cork.

A 1-piece-pan-gasket, or a 1-piece-rear-main-seal pan gasket?
