Choke/Alt Light - Weird Problem?

Choke/Alt Light - Weird Problem?
Have a weird one for you guys. I haven't seen this one come up yet and its got me confused.
I got my '83 Z28 (originally 5.0 HO, T5 but now 4bbl 350, T10) back together and driving a few days ago. The car is mostly good, but I have one really weird electrical problem I can't sort out.
The 'Choke' light (alternator light) comes on at seemingly random times, but for no reason? The battery connection is good, the alternator is charging and it shows on the guage too, and having no other noticeable problem when the light comes on.
What would cause that light to turn on? It seems to be charging and the battery is good and the connections are good. I can't figure this one out.

I assume you've tested while the problem is occurring? Hey, had to ask because it's something I probably neglect
