I just pulled the 350 out of my other camaro. I took it apart and found a very slightly chipped piston skirt.

Well you wont really notice a chipped piston skirt. Depending on how badly chipped it is and where it may destroy the cylinder bore and then it might run alittle rough as result of the rings sealing badly but a chipped piston skirt may not yeild any poor running condition depending on where its chipped and how badly.
