Engines started, high idle, then died.

Engines started, high idle, then died.
So, instead of trying to figure out engine tuning and wiring with my first true engine build with the engine in the car, I've got it all on a test stand. Now, I've done lots of searching and learning of crap. I haven't found the answer to my current problems.
First off, here are specs:
Holley Carb, manual choke, mechanical secondaries.
355 small block chevy, open headers
So, first time firing up, choke closed, it ran with a high idle. I didn't have a look at the tach at the time, but it reduced in rpm and then died shortly there after. This same sort of thing happened a couple times and when ever I got my hands to the butterfly valves on the carb to open up the throttle, or choke it dies instantly. Also, if I try to start it with manual choke open, it won't start. Now, I think it has to do with little things with the carb, but I'd like to know if anyone can help me pinpoint it here.
Thanks
