Running too hot?

Running too hot?
Hey, my 86 Z28 seems like it's running a little hot. It was running even hotter a while back (like 240-250) and I figured out I had a blown head gasket. Fixed that, but it still seems to be running a little too hot when I drive it hard for a bit compared to my 92 Silverado (350TBI) under the same conditions. The Camaro runs about 220 after 20 minutes of driving at speeds between 70-90mph. Also, when I shut off the engine after this or even sometimes less aggressive driving, it sounds like the exhaust or something is making a clunky/crash noise. I dont know if it's related, but it does make my car feel really ghetto and I wanna find a fix for that as well.
Any ideas?
Edit: Also here's what the car has if it helps any:
350 crate engine that was put in the car around two years ago with an Edelbrock carb
Almost new water pump (maybe a few months old?)
Radiator and thermostat are maybe a year old
Almost everything on the engine is less than two years old except maybe the exhaust manifold and a few other things I cant think of at the moment. Matter of fact, the whole exhaust is stock and I'm planning on replacing it as soon as possible as it's rusted in some places and currently has not muffler. I'm thinking that may be part of the clunking problem?
Any ideas?
