Sounds like your timing is too far retarded. Turn dizzy slightly CCW, start and immediately check timing.

Re: Scared to start my rebuilt engine
What kind of factory fuel pump was in it ? Was it ever removed ?
What kind of pump are you using NOW ?? Where is the fuel pump mounted NOW ??
Still got the original Canister type "in-line" Fuel Filter installed ?? Got any other additional fuel filters on the fuel line ??
Are you SURE that it's got plenty in the tank and that it's fuel starvation causing the car to stall?
How did you get the fuel line to connect from engine bay fuel line to the carb ??

Re: Scared to start my rebuilt engine
I'm running a mechanical one on the block and it has the stock canister in line filter and has fuel pump in the tank still and I just put gas in it before I started it and when it stutters an dies I open the carb and there's no fuel coming out of the jets I have to jump in in tank one and turn the motor over to get fuel again

Re: Scared to start my rebuilt engine
My first guess is that the original in-tank pump is the problem. I NEVER leave the in-tank pump in place when converting from FI to Carb. The block mouted pump is trying to pull the fuel though the original in-tank pump.
I'd also recomend installing a new canister fuel filter while your under the car. I doubt a blockage is the problem - but a new filter will eliminate that possibility.

Re: Scared to start my rebuilt engine
yea, drop the tank and go from there. you could pull the electric pump out of the stock tank and fab up a pick-up for it. its pretty easy to do.
heres a good video on setting your timing.

Re: Scared to start my rebuilt engine
Because it's a ton of extra work and nonsense thats unnecessary. I would just get a fuel pressure regulator and call it a day and use the electric pump.
