What's the safest max lift on a cam I can buy and run on stock valve springs?

Stock cams are already too much

No aftermarket cam can be used with NEW stock springs, let alone old wore-out ones.

Yes

Stock cams are around .400", with really mild gentle longevity-optimized ramps at the expense of "performance", and stock springs are pretty much maxed out by them.

They are TOTALLY COMPLETELY inadequate for an aftermarket "upgrade" cam, especially any modern one with aggressive violent valve action like the Voodoo or XE series.
