I was thinking today and as cool as having a carbureted 350 sounds and looks when you open the engine bay, this thing is a royal pain. Then I got to thinking about TBI on the older trucks I've seen around. Would it be possible to adapt a TBI onto my 4 barrel Weiand intake and have it run properly with the correct sensors? There's a ton of older trucks in junkyards around here I could get all the parts off of.

Yup... plenty of adapters on the market.

Main issue would be, fuel supply.

I thought the TBIs ran off 6lb like the mech pump I currently have puts out? Or am I mistaken.

The truck TBI system needs 12-18 psi. You could swap the fuel pickup/sender assembly in the tank with a later thirdgen one for an electrical fuel pump and swap in a pump for a truck. Then you would need to reroute the fuel lines in the engine bay. The inlets on the TBI are on the back of the TB. You would also need to run a return line to the tank if you don't have one now. Then, of course, there is the wiring harness and ECM, a way to burn chips or program the ECM, sensors, charcoal canister, distributor, and coil. It could be done with a truck TBI system, but would be much easier with one from a thirdgen
