Optimum engine coolant temp question

First off what is the temerature the engine should be running for maximum ecomomy and preformance? Second, what if you could make your computer think it was running at this temp all the time? Would this mess up other sensors? If so which ones? Ive solved the problem about the cooling fans, i have a seperate adjustable thermostat, plus a switch in the dash, so cooling isnt a problem. Has anyone done this, or thought of it?

Chevy SB's generally produce maximum power on the dyno @ 170F degrees.
Maximum fuel economy would come at a much higher temperature.

160 is way to cold, especially in winter. These cars run well from 175-195 degrees.
By the way, in the winter here...my 170 stat ran at 176degrees all the time.

Also, with colder motors (internally too), you are more prone to knock.
