Screw up my MAT sensor by chucking it in water?
I took my plenum off a while ago and tossed it in the sink to be cleaned. I couldn't get out the MAT sensor at the bottom so I took my chances and left it in. The plenum was left in the sink fully submerged in hot water with dish soap fo a few hours. It came out clean, but did I screw up my MAT sensor? I haven't put the the plenum back on yet and has been left to dry for about two months.

I doubt that you did anything to damage the sensor. The sensor is basically the same design at a CTS, made for water contact on the sensor side. If you want to check before installing it, get out yout ohmmeter and take the sensor back to the hot water faucet. The resistances at temperatures should be close to this:
