What EXACTLY is the problem?

I have a 91 z28 with the 350. It's been so long since I've felt the true power of my ride. At one point it started bogging down on me when I accelerated. I changed quite a few things to try to fix the problem; new distributor, new MAP sensor, new o2 sensor, cut off cats and got new exhaust, new plugs and wires and here recently I changed the fuel pump because the old one whined loudly. Now my car doesn't bog but yet when I accelerate a tad it kinda cuts out and when I stomp on it, it shakes likes it's missing. Not only that but if I drive to somewhere that is 15 minutes away, park, shut the car off and wanna leave, I can't. Because I press on the gas and the engine sounds likes it clogged up and it won't go. But if I wait aprox. 2 hours, then it will run better again.

I'm trying to find the problem on my own but I'm just understanding cars plus I don't have much money so I wanna stay away from a mechanic until I know for sure what the problem is. So any help would be greatly appreciated.

How many miles? Check the fuel injectors....
Mine was running fine... then like crap... You can check the ohm's on them to see if they've gone bad.... then off to the next idea...

It has 140k miles. New trans though. I'll be able to check the ohms tomorrow and I'll let you know how that goes.
