Did I fix the problem, or just cover the symptoms?

I bumped my fuel pressure up again to where it was when I got the car (60 PSI, according to the gauge at the schraeder valve), and all my cold start/crappy running problems have vanished.

Should I assume the gauge is crap, and lowering my fuel pressure was the problem to begin with, or is turning up the FP masking another more important problem here?

You might check the pressure with another guage. I'm inclined to believe that it truely needed that pressure. If you have access to an O2 sensor tester, see if the cross-counts look normal, if so just let it ride.
