1.) What kit do yall recommend for a complete rear-end rebuild? Any that I should stay away from?

2.) I'm going to 3.23's and a posi out back, where can I find some speedo gears for this? I seem only to be able to find 3.42 and higher (numberically of course). . .

since you have the gears there isn't much left to buy, rebuild kit, maybe axle bearings, if you prefer solid crush sleeve.
