how much fluid?
how many quarts will a freshly built 700R4 take if it is completly empty. also, how may quarts of rear gear lube will my 10 bolt need after my axle and SLP posi installation?

A dry 700 takes about 11 quarts of fluid.
The amount your rear will hold depends on what cover you use.... with a stock cover it's about 1½ quarts, with a T/A cover or other good quality one, it's nearer to 2 quarts.
