Stall on a Torque Converter

I was wondering. What exactly does the stall mean on a torque converter. I am going to be swapping out my L03 in the near future with a 350 High Output engine which will be hitting 350hp/425lbs torque at the flywheel (*** knows what at the rear wheels). Should I replace the stock torque converter with an upgraded one. TCI, Vigilante, B&M...those are a few names I know from magazines...do you recomend any of these and if so what stall should I pick?
