Rocking/Stumble When Accelerating In Gear

Just got my second engine swap done on my Camaro, took it out for one quick ride. The biggest problem is when I start to accelerate and stay in any gear for a while, the car will start to jolt back and forth, like when your in to low of a gear, but its happening when Im at over like 2500rpm (my Summit tach stopped working so I dont know the exact rpm) I had a knew U joint put in my driveshaft(back one) Last year the car would vibrate in certain speeds at certain rpms. Whats are some possible causes?

My ideas are:

Driveshaft not at correct angle. We modified the V6 T5 cross member to use a V8 tranny mount. That was last year, but the car wouldnt do this jolting back then.

Driveshaft no good, needs rebuilt.

U-joint installed incorrectly.

Would one (or all) of those causing this type of wierd movement?

Should there be any play in the driveshaft between the bearing caps the retaining straps go over? Mine is able to move side to side a little.

I retightened the driveshaft, took the play out of it I think. But the car still bucks after a while in second and third gear. Once I throw it in neutrel it stops. I cant believe no one has given any suggestions yet.

Could it be the engine itself hunting around on part throttle?
