That would depend on you. If you want the steep first gear of the 700 and overdrive, I would choose the 700. If you would prefer a less steep first gear and no overdrive or lock up(less gas milage) then the 350 would be the better pick.
At $3.00 a gallon, i have no plans to ever use a turbo 350 on a street car. Others would.

If you plan on putting a few miles on that thing i would say go with the th350 or if you can, find a th350c like me. that way the mileage wont be as bad because you still retain a lockup feature.
From what i have seen on here even 'built up' $2k+ 700r4 trannys have died on the street behind sub 500hp motors. In stock form the 700r4 is pretty weak, they burn up behind 180hp 305s!
So if you plan on putting some hard miles on it i would say drop the th350 in. My th350c was a junkyard trans from an 81 regal, its never been touched other than a shift kit and it is still operating 100% to this day!

a true, good, 700R4 will take what you're gonna do. The problem is too many shops build "500hp" 700R4's that are basically stock remans with a little better clutches, some el-cheapo "shift kit" and a vette servo. This would be great behind a stock vortec 4.3 V6.
- that said, check PATC(the Raptor) and check Pro-Built Automatic's site. A good 700R4 isn't cheap, but neither is premium gas.
...how about a 4001 lb, carb'ed GTA vert that runs 11.7X's(NA) on 17" wheels and tires, gets around 17 in town and 21-22 highway?

If you're building a 500 hp motor, fuel economy is one thing you throw out the window on a small cube, non power adder, carb motor.
