Does anyone know how the U joints are held in, are they epoxyed or is there clips? and how hard is it to put new ones in?

Re: U joints

They are held in by thin, curved clips. I've always used pliers to compress them and pull them out of the groove in the holders. Sometimes the U-joints press right out, other times they're stuck pretty tight. If you have a press, the job is pretty easy. You can also buy a C-clamp tool for removing and installing new ones. The only real problem is having to press so hard that you deform the holders. Some people use a torch and cut the crosses out first so they're only pressing on socket at a time.

Re: U joints

there are c clamps if the u joints have been changed before if they are stock they are held in with a type of compresed plastic inside the housing if you look at the u joint you will see a bump on the housing, sorry this is hard to explain, but the best way to do this is to heat up the u joint housing with a toarch not red hot just enough to heat up the plastic retainers, not the u joint and watch the plastic press out like a snake.
