I'm probably really late with this, but it would depend on where your leak is coming from. If it's the pump or steering box, you're gonna lose a lot of fluid when you replace it and will need a couple quarts. If it's not the pump or steering box, you can start with a pint, and go from there, just don't let the pump reservoir drain while you're doing your work. Put a hose over the line coming from the pump with a screw/bolt in the end of it to keep it from leaking out.

Really, I do not know how much fluid it holds, but usually cars have a oil stick on the cap where it reads cold and hot. Best thing to do is add and check frequently. I would get that replaces ASAP if it is leaking badly. Although, never drain the system. The pump will go out and could wreck your steering box due to lack of lubrication. I would price new hoses and replace it. Hoses are still cheaper than a pump and steering box.

Just buy a quart of PS fluid.
If its the pump shaft leaking, the pump itself is cheap and easy to replace, just take your time not to F up the threaded fitting or youll be getting a new PS hose too. ask me how I know.

Oh, I know I realized that. I'm used to modern day cars because I always work at them at the shop. Yeah, I know it is definitely not a rack and pinion. I have a rack and pinion to replace for a customer. So, it was on my mind. Yeah, I'm sorry about it.
